It stars extra-firm Simple Truth Tofu, meticulously prepared to a perfect golden crispness. The tofu cubes are coated in gluten-free Maizena corn flour and seasoned to perfection, offering a delightful crunch in every bite.

To serve, arrange these crispy tofu cubes on fresh, crisp lettuce leaves, creating a delightful contrast to the succulent tofu. Enhance the presentation with a medley of spring onions, optional chopped peanuts for added crunch, fresh coriander, and vibrant sprouts.

Elevating the dish is an exquisite Asian dressing, skilfully crafted with soy sauce, zesty lime juice and zest, rich hoisin sauce, a touch of sriracha for heat, and the aromatic allure of grated ginger and crushed garlic.

Directions

1. Drain the tofu and press to remove excess moisture.

2. Cut the tofu into cubes and place them in a bowl.

3. Add corn flour, salt, and pepper.

4. Toss to coat the tofu cubes.

5.Heat a non-stick pan over medium-high heat and fry the tofu cubes until they turn golden.

6. Alternatively, place them in an air fryer for 8 – 10 minutes until they become crisp.

7. In a separate bowl, mix the soy sauce, lime juice, lime zest, hoisin sauce, sriracha, maple syrup (if using), a small amount of corn flour, and water. Stir until well combined.

8. Add the spring onions, peanuts, garlic, and ginger to the pan. Fry for a couple of minutes.

9. Pour the sauce into the pan and cook until it thickens.

10. Divide the tofu between the lettuce leaves, and top with extra chopped peanuts, sprouts, finely chopped chilli, and additional lime wedges on the side for serving.

  • 500g extra-firm Simple Truth Tofu
  • 1 tbsp. (15ml) Maizena Gluten-free Corn Flour
  • Salt and pepper
  • 6 spring onions
  • 8 lettuce leaves
  • 2 tbsp. (30ml) Padkos Peanuts; finely chopped (optional)
  • 1 handful fresh coriander; chopped
  • 1 red chilli; finely chopped
  • 1 packet sprouts

 

For the Asian Dressing:

  • ¼ cup (60ml) soy sauce
  • Zest of 2 limes; juiced and grated
  • 3 tbsp. (45ml) hoisin sauce
  • 1 tbsp. (15ml) sriracha (adjust to taste)
  • 2 tsp. (10ml) Forage and Feast Maple Syrup (optional)
  • 2 tbsp. (30ml) water
  • 1 – 2 tbsp. (15-30ml) ginger; grated (adjust to taste)
  • 1 – 2 garlic cloves; crushed
